CAS 4911 - Internship in How Food Works in the Community The course provides internship opportunities for students who wish to understand how food works in the community. No prior background or training in food studies is required. Students work with local organizations on a broad set of issues connected to food security, access, production, processing, marketing, distribution, consumption, waste,composting, food choices, and food culture.
Credit Hours: 1 - 8 OHIO BRICKS: Bridge: Learning and Doing Repeat/Retake Information: May be repeated for a maximum of 16.0 hours. Lecture/Lab Hours: 2.0 internship Grades: Eligible Grades: F,CR,WP,WF,WN,FN,AU,I Learning Outcomes: - Students will be able explain the impact of community level non-profit food initiatives such as Community Food Initiatives, Live Healthy Appalachia and Rural Action.
- Students will be able to describe and explain the phases of the food system from production, distribution, consumption, and composting.
- Students will be able to describe how local food processing facilities such as grain mills and dairies operate.
- Students will be able to describe the challenges faced by local diversified agricultural producers in Southeast Ohio.
- Students will be able to describe the complexity of food and socio-cultural identity issues and the perception of food choices.
- Students will be able to explain how food can be an engine for entrepreneurship and local economic development.
- Students will be able to identify the problems faced by food insecurity organizations like food pantries and food banks.
- Students will be able to connect internship experience and academic knowledge gained in their major fields.
- Students will be able to transfer the skills, abilities, theories, or methodologies to effectively carry out their internship duties.
- Students will be able to communicate about their internship experience using realia, writing, and oral and audio-visual presentation modes.
- Students will be able to reflect upon their internship, assess their performance, and identify their strengths and weaknesses.
